JOB ROLE
To assist the food & beverage director in planning, organizing and supervising all processes of the fine dining outlet & to provide hands-on support to food and beverage associates. Also to ensure the outlet provides quality service that is consistent with the property’s SOP to achieve maximum revenue and profit in line with the budgeted and forecasted projections.
JOB RESPONSIBILITIES
·Supervises coordinates and directs the prompt, efficient and courteous service of food & Beverages in the fine dining outlet.
·Staffing and scheduling to ensure proper coverage in outlet and wage control.
·Establishes and maintains effective employee relations.
·Conducts under the guidance of food & beverage director such functions as colleagues orientation, on-the-job performance appraisal, coaching & counselling to ensure appropriate staffing and productivity.
·Responsible for developing formal training plans for the standards of operation and corrective training for any shortfalls and implementing them to achieve results:
·Maintains daily Outlet checklist for opening, closing and other tasks.
·Ensures associate’s grooming and appearance standards are met.
·Conducts pre-meal briefings and maintains liaison with the outlet Chef in charge.
·Cascade all information’s to the outlet team.
·Ensures Outlets setup, service are following required standards/requests.
·Reservations of tables are communicated with special requirements to all concerned.
·Welcomes guests and assist them in seating.
·Assists in order taking, service, clearance following the requirements and practices of the outlets (SOP).
·Controls billing procedures for any food or beverage served through proper accounting.
·Attends / visits each table during service to communicate with guests for their comments/suggestions.
·Oversees movement of staff inside or back of the restaurant for appropriate and efficient service.
·Controls stocks for daily use in the outlet to ensure service requirements are met and maintain par stock of supplies & equipment through the requisition. Ensures Breakages / Loses of equipment’s and supplies are accounted with concerned authorities.
·Strives to bring business to the outlet by actively initiating promotions and deals that will attract customers.
·Maintenance requests for faulty F. F. & E. and facility are actioned and followed up.
REQUIREMENTS
·Minimum 2 years of current & relevant working experience in the same role in a high end & high volume stand-alone fine dining outlets.
·High School or equivalent. GED or Vocational education.
·Food Hygiene – PIC, HACCP Awareness – PIC, Train The Trainer, WSET Level 2
·Food safety and food hygiene specified by the standards/legislation
